IMBB 16th edition: Eggs – Egg Liquor and Egg Liquor Muffins with Chocolate

The 16th edition of „Is My Blog Burning is hosted by Seattle Bon Vivant – the theme; eggs.

I decided to prepare an egg liquor (a kind of egg nog) in my Thermomix,
a nice but quite expensive kitchen gadget which allows you to mix and
cook at the same time. Some years ago I bought the old model in an
auction, which saved me a lot of money 🙂

This is all you need: Egg yolks, sugar, vanilla sugar, evaporated
milk, Schnaps and 10 minutes of time. So here’s the quick recipe:

Egg Liquor

6 egg yolks
250 g sugar
1 pk vanilla sugar
170 g evaporated milk (10% fat)
250 ml Doppelkorn Schnaps (38 percent alcohol)

Put egg yolks, sugar and vanilla sugar in the bowl of the Thermomix
and mix for 10 minutes at 80°C on speed 1. After 4 minutes slowly add
evaporated milk and alcohol. That’s it!

Pour into a decorative glass bottle and cap.

Self made egg liquor makes a nice present.

You can use the liquor for the following muffins:

Egg Liquor Muffins with Chocolate

dough
125 g soft butter
2 eggs
125 g sugar
125 g flour
1/2 pk baking powder
3 tb flaked chocolate

glaze
75 g semi-sweet coating chocolate
25 g white coating chocolate

Place the paper muffin forms in the muffin pan. Preheat oven to 200°C.

With an handheld mixer beat the butter until foamy. Beat the eggs

and the sugar until well combined. Mix butter and egg mixture. Sieve

flour and baking powder, add the flour to the egg-mixture

carefully folding into the dough, add the egg liquor and the

flaked chocolate gently but thoroughly folding it into the batter.

Fill the forms 2/3 full with the muffin batter. Place the pan in the

middle of the oven and bake the muffins  for about 15-20

minutes. Let cool on a rack.

Melt the chocolates separately in the microwave oven.

Glaze the muffins with the dark chocolate, let dry. Fill the white chocolate in a small paper piping bag and pipe some delicate lines across the top of the muffins. Enjoy!

6 Eigelb
250 Gramm Zucker
1 Pack. Vanillezucker
170 Gramm Kondensmilch 10% (1 kleine Dose)

Zubereitung

Eigelb, Zucker und Vanillezucker im Mixtopf 10 Minuten bei 80°C auf Stufe 1 schlagen.

Nach 4 Minuten die Kondensmilch und den Alkohol langsam durch die Deckelöffnung zugießen.

In eine hübsche Glasflasche gießen und diese verschließen.

Tipp: Selbstgemachter Eierlikör ist ein nettes Geschenk.
